| Winemakers Notes-Harvest-Vinification-Fermentation | Harvested in the cool of the morning at optimal ripeness after a glorious growing season, the fruit for this wine was carefully pressed after brief skin contact before cool settling in tank. Once slightly clarified, the juice was fermented with aroma enhancing yeast at cool temperatures, ensuring maximum expression of the true varietal characters of fully ripe Pinot Gris. One dry, this wine left on lees for several weeks to ensure textural richness and depth. Prior to bottling the wine was delicately fined with fresh skim milk, stabilised and filtered. |
