| Winemakers Notes-Harvest-Vinification-Fermentation | Wonderfully ripe Merlot and Malbec from another excellent vintage was harvested in the cool of the morning and kept cool once crushed, so some juice could be siphoned away to make Rosé. The juice was briefly settled to clarify and then fermented with aroma enhancing yeast to maximise the expression of berries and flower notes. Once finished ferment and the balance of sweetness was attained, the wine was carefully fined with isinglass before being stabilised and filtered for bottling. |

| Winemakers Notes-Harvest-Vinification-Fermentation | Carefully hand harvested in the cool of the morning, the parcels of Merlot and Malbec were then transported directly to the winery for cooling and crushing. The two varieties were crushed together to the press and held during a cool night to achieve the best colour and flavour concentration without excessive tannin extraction. Then gently pressed taking only the most delicately flavoured juice for fermentation. Cool temperatures during fermentation ensure retention of vibrant red berry aromas and flavours. Traditionally fined with a sensitive touch of isinglass before filtration and bottling. |

| Cellaring Recommendation | Rosé wines are usually considered best the year of and the year after vintage, however this wine has excellent structure and should develop more creamy notes as it ages. Should be fabulous for 3 – 4 years. |
