| Winemakers Notes-Harvest-Vinification-Fermentation | Carefully hand harvested in the cool of the morning after a spectacular summer in Gisborne, the perfect grapes for this wine were gently whole bunch pressed before the juice was cooled and slightly clarified in tank. The juice was then transferred to a mixture of French and American barriques where a selection of yeasts were added to provide a complex expression of both fruit and oak. After a select portion of the blend had completed Malolactic fermentation, the wine was aged in oak for another 9 months and then gently fined with fresh skim milk prior to filtration and bottling. |
