| Winemakers Notes-Harvest-Vinification-Fermentation | Harvested in the cool of the morning at optimal ripeness, both varieties for this wine were quickly transported to the winery where the juice was extracted while still cool. The Chardonnay was fermented in stainless using careful temperature control to maximise delicate flavour and aroma, while the Viognier was fermented in mature barriques, offering texture and richness. Fined with traditional agents of fresh skim milk and isinglass before filtration and bottling. |

| Winemakers Notes-Harvest-Vinification-Fermentation | Harvested separately in the cool of the morning, both Viognier and Chardonnay were crushed and destemmed to the press before being cooled as juice in tank. After gentle clarification the juice of the Chardonnay was racked to tank for cool fermentation followed by complete malolactic fermentation. The Viognier was transferred to mature French barriques for fermentation and lees ageing. An harmonious blend was achieved with 60% Chardonnay and 40% Viognier. The wine was gently fined and filtered prior to bottling. |
