Description Seductive aromas of black plum compote, allspice and fruit cake emanate from this purple hued wine. These rich characters are then exhibited on the palate which is velvety smooth throughout, leaving long lasting flavours of vanilla and dark berries.

Wonderfully seductive aromas of black plum compote, allspice and fruit cake emanate from this purple hued wine. These rich characters are then exhibited on the palate which is velvety smooth throughout, leaving long lasting flavours of vanilla, hints of cinnamon and dark berries.
Winemaker Anita Ewart-Croy
Winemakers Notes-Harvest-Vinification-Fermentation Selectively hand harvested and then gently destemmed, partially crushed Carmenere berries were then plunged twice daily in a small open fermenter while complexity enhancing yeast conducted the ferment. Once dry, the Carmenere skins were pressed from the wine, and the wine was transferred to American and French barriques for malolactic fermentation. After 18 months maturation in wood, the wine was gently fined with fresh egg whites befoe being filtered and bottled.

Cellaring Recommendation This well structured wine shows wonderful richness now, with full expression of fruit aroma and flavour. Ripe tannins and balanced acidity will ensure cellaring for  7 – 10 years.

Carmenere with it’s sweet plum fruit and smooth tannins will partner well with antipasti, flavoursome ragout and pasta, as well as lamb and beef.
